Healthy Peanut Butter Protein Balls (gf, df,)
Only FOUR ingredient peanut butter balls dipped in chocolate!
These peanut butter balls have a rich and creamy inside and are oh so delicious!

Healthy Peanut Butter Protein Balls (gf, df)
Serves: 4 Peanut Butter Balls
Ingredients:
1/4 cup creamy peanut butter ( I like this brand)
4 servings of collagen (about 1/4 cup plus 1 TBS) (if you don't have collagen, almond flour would be a good substitute)
1 TBS honey
2 TBS chocolate chips ( I love chopping up Eating Evolved chocolate!)
Directions:
In a medium bowl, mix the creamy peanut butter and the collagen. The consistency should resemble a dry dough.
Add in the honey and mix until a creamy dough forms.
Divide the dough into four parts and roll each of them into balls. Refrigerate the peanut butter balls (if you refrigerate them for an hour, it really helps them keep their shape when dipping them in chocolate).
Melt the chocolate chips in a microwave-safe bowl.
Take the peanut butter balls out of the fridge. Dip them in the melted chocolate and place on parchment paper to dry.
ENJOY!!
PS: I bet these would be amazingggg with coffee/tea in the morning!
Store in the fridge for 4-5 days (if they last that long)!
